The meeting “From Theory to Practice” was held at the University of Azuay

On March 31, at the University of Azuay in conjunction with the University of Veracruz, the discussion "From Theory to Practice" was held, where the work "Chiles, Ajíes and Pimentas Capsicum in the Caribbean, Central and South America" ​​was presented, an event aligned with the Sustainable Development Goals.

The event was attended by authorities, teachers, administrative staff, students from our university community and the general public. 

At the start of the event, the Vice-Rector of Research, Raffaella Ansaloni, mentioned that this event is important because of its multidisciplinary scope, as it welcomes students of Biology, Anthropology, Food Science, and Agroecology, which is why "it tries to promote the transfer of knowledge from theory to practice and connects various disciplines such as agriculture, anthropology, and gastronomy," she emphasized.

The work "Chiles, Peppers and Capsicum Peppers in the Caribbean, Central and South America" ​​was presented, coordinated by: Esther Katz, Marco Antonio Vásquez Dávila, Araceli Aguilar Meléndez, Isabel Manzanero Medina and where one of its chapters was written by Raffaella Ansaloni and Tania González that analyzes "The chili pepper in the diet of Saraguro of Ecuador".

For Tania González, this book represents the fruit of a great deal of work, of sharing research with Raffaella. “This work speaks of a plant that many of us have seen, the chili pepper, but which is very little known in scientific and academic terms, and even less known ancestrally and culturally. The earliest records go back to the Valdivia culture, nearly 6000 years old. The chili pepper is there, accompanying families at the table and in their economy,” she explained. 

At the end of the discussion, a tasting and demonstration of the preparation of different varieties of chili peppers was carried out.
