Beer making and tasting course

The School of Food Engineering of the Faculty of Science and Technology of the University of Azuay will offer its students, teachers, administrators -as well as the general public- the second edition of the course of preparation and tasting of craft beer.

Craft beer is one of the gastronomic phenomena with the greatest boom in recent years. It is one of the drinks of preference of consumers, therefore, its demand has increased, obtaining a great presence within society.

The first thing that distinguishes craft beers from industrial beers are the components. Similarly, craft brewers have more freedom when creating their beers. That is why there is greater diversity in these drinks in their styles.

Monica Tinoco, one of the organizers of this course, mentions that "it is a striking event, craft beer is currently booming due to its variety of flavors, aromas and experience in the mouth that this drink gives".

The professor points out that beer was a product that was not studied in depth during the career, which is why they decided to acquire the necessary machinery to produce it within the University laboratories.

Due to the health crisis that continues to go through the country, the course will have the following provision:

Theoretical classes will be virtually on a schedule from Monday to Friday, where participants will learn the fundamentals, history, ingredients, among other information about the process of making this drink.

Four types of craft beers will be delivered to each registrant so they can experience a tasting guided by the trainers from their home.

On the other hand, the preparation class will take place on Saturday morning in person, taking into account the biosafety measures established by the Emergency Operations Committee (COE). In addition, small groups will be held that respect the limited capacity of the University laboratories.

In this second edition, two trainers will be present. One of them is Mateo Carrasco, who in 2015 obtained a specialization in craft beer production from the University of Alicante.

Likewise, he has been a certified beer judge by the Beer Jugde Cerification Program (BJCP) in the United States and is currently a brewer for “Cervecería Artesanal Becken”.

Also present will be Pablo Chica, appointed as a Brewmaster by the Brewing Institute for Research and Teaching (VLB) in Berlin, Germany and currently practicing his profession at the Oblonger Craft Brewery.

The course has a value of $ 65 for students, teachers and administrators of the University of Azuay, while for the general public it is $ 75. Both will include the beers for tasting and the raw material for making them.
