Talk about fresh pasta from Italy for the UDA

On October 16, the Faculty of Science and Technology presented the lecturer Ambrogina Pagani from the University of Milan with her talk “Fresh pasta: a gift from Italy to the world”, through YouTube.

Patricio Suárez, researcher at the School of Food Engineering, was the one who contacted Professor Pagani and one of the coordinators of the event, which had the support of the RedU of cereals and the like; the Department of Food, Environment and Nutritional Sciences and EDEC (Municipal Public Economic Development Company).

Suárez explained that the conference had to be recorded, since the teacher is Italian and it was necessary to translate it in order to be presented.

The objective of the talk was to encourage attendees to promote the production and sale of fresh pasta that, unlike dry pasta on the market, offer new experiences to the consumer.

These products have a much higher humidity than dry pasta, which makes their shelf life difficult, however, made under suitable conditions, it is possible to give them greater durability.

The conference was re-scheduled to be presented in two parts: the first part was on October 16 at 11:00 am and the second part will be broadcast on Friday the 23rd at the same time on YouTube.

Dr. Suárez commented that the potential of this type of product in this environment can generate jobs and movement in the economy.
