Presentation of the book on canned vegetables

The presentation of the book "Introduction to the technology of canned vegetables" by the authors Miguel Carrión and Cristian Rojas, teachers of the Faculty of Food Engineering, was presented at the November 21 in the auditorium of the Faculty of Science and Technology.

The Rector of the UDA, Francisco Salgado, and the Dean of the Faculty, Andrés López, congratulated the authors and motivated those present, especially the students and graduates of the race, to carry out research so that they can be published .

"This book contains information on the processing in different forms of vegetables for human consumption, applying concepts and technological systems," said Miguel Carrión, specialist in Food Engineering and co-author of the work.

Carrión thanked the University authorities for making possible the launch of the book and expressed to the co-author, Cristian Rojas, a special thanks for being part of this project in which he worked for many years with effort and dedication.

"Initially the book was made for students only, but as a series of extra issues have been added, it is also for teacher consultation," Carrión concluded.

Karen Pacheco, student of the ninth cycle of Food Engineering, said that the topic covered in the book is important since it is a very necessary support material since much of the bibliography on this issue is in English or difficult to reach :

“Many times we have needed information on this subject and we have not been able to find it, this book has exercises, theory, images and graphics, it is very didactic,” said Pacheco.
